Spaghetti With Spinach Sauce



Pesto...pesto...
I wanted it badly. But, thanks to my local market, i can't find the ingredients anywhere.
Al the ingredients basil, pine nuts, and everything
Then I found this amazing site and in some recipes they said that you can replace basil with spinach, so i tried this recipe.
It's very delicious, my kids love it and they didn't realise that it was spinach.
Most of all I love the green colour that made this meal was very beautiful.

wash the spinach, i love my new salad spinner from IKEA (again)

cook the pasta then set aside, don't forget to save a cup of pasta water.


heat olive oil and sauté the garlic until it smells nice

Toss the spinach

Mix the spinach and add some salt and pepper then remove from heat

Add the spinach and garlic mixture and toss some parmesan and half of pasta water in a food processor.
Puree until it form a sauce

Place the spaghetti on large skillet and toss the spinach mixture

Mix all together, add salt and pepper and more pasta water if needed.

Ready to served. Sprinkle with extra parmesan cheese



Ingredients:

2 tbs olive oil
2 cloves of garlic, sliced
2 8oz/240g fresh bags baby spinach --> i used normal size spinach
salt and pepper
8 oz/240g spaghetti
1/2 cup or 40g grated parmesan or pericano romano cheese (plus more for serving) --> i found this halal grated parmesan in store,  big yeayyy!


Instructions:
  1. Heat the olive oil In a large deep frying pan on medium high heat.
  2. Add the garlic and cook to soften but not quite brown.
  3. Add the spinach and saute with the garlic until wilted. Season with salt and pepper, remove from heat and set aside.
  4. Cook the pasta according to the package instructions. Reserve a cup of the pasta water before draining. Drain, and set aside.
  5. Add the spinach and garlic mixture to a food processor or blender with the cheese and half of the pasta water. Puree until it forms a sauce (adding more pasta water if needed).
  6. Add the and sauce back onto the pan to combine and heat through, again adding more pasta water if needed.
  7. Once heated through, taste and season with more salt and pepper if necessary.serve sprinkled with extra grated cheese.
